Apple Buns I have a pen --> I have an apple (bun)


  • 1/2 package dry yeast
  • 2,5dl full fat milk
  • 1,5dl sugar
  • 1/2 tsp salt
  • 3 tbsp ground cardamom
  • 1 egg
  • 150g melted butter
  • ca. 10dl flour
Apple filling:
  • 3 Finnish or Swedish apples, peeled and cut into small cubes
  • 20g butter
  • 1/2dl sugar
  • 2tbsp ground cardamom
Cinnamon filling:
  • 200g almond paste
  • 150g butter in room temperature
  • 1/2dl sugar
  • 3tbsp ground cinnamon


Apple filling:
  • In a pan fry apple cubes in butter and sugar for a few minutes. Leave to cool.
Cinnamon filling:
  • Blend soft butter, almond paste, cinnamon and sugar to a smooth mixture.
  1. In a large bowl mix the yeast with 2dl flour, sugar, salt and cardamom.
  2. In a smaller bowl warm the milk to 40°C. Add milk to the yeast mixture.
  3. Add the egg and melted butter to the yeast mixture while mixing constantly.
  4. Add rest of the flour. In the end consistency of the dough should not be a little firm, but the dough should not stick to the sides of the bowl.
  5. Put the dough to a warm place to rise for an hour.
  6. Make a thin rectangle of the dough. First spread cinnamon filling and then apple filling on it. Roll the dough and cut it to ca. 3cm wide slices. Put the slices into baking forms.
  7. Optional: Let rise for further 10-30minutes on a baking tray.
  8. Optional: Spread buns with egg and top with almond flakes and/or nib sugar.
  9. Bake for 8-10 minutes in 220°C.

Our philosophical thoughts of the recipe:

I recommend to use sweet apples :) Recipe makes about 18 medium size buns. This is enough for 6 persons (because one person eats 3…).
