Bouillabaisse fishy business

Ingredients:

  • 800 g frozen cod
  • 4 cloves of garlic
  • 2 onions
  • 1 red chili
  • 1 red pepper
  • 1/2 leek (green parts)
  • 2 medium parsnips
  • 600 g potatoes
  • 1 fennel
  • 1/2 celeriac
  • 4 big tomatoes
  • 2,5 dl full fat oat cream
  • 8 dl water
  • 2 bay leaves
  • rapeseed oil
  • fresh thyme
  • fresh rosemary
  • salt
  • freshly ground black pepper

Instructions:

  1. Peel the potatoes and cut the vegetables
  2. Steak garlic, leek and onions in rapeseed oil until golden
  3. Add rest of the vegetables and let cook for a couple of minutes
  4. Add water and cream and bring to the boil
  5. Add bay leaves and cod. Let cook for 15 minutes or until potatoes have desired consistency
  6. Season according to taste with rosemary, thyme, salt and pepper
  7. Best served with home made aioli!!
